Dinner for one? It can be done

Sometimes it can be daunting when you are alone and think, dinner for one? How sad.

Well it shouldn´t be, aslong as you put yourself in the right frame of mind and get the best ambience, you can enjoy the pleasure of cooking and eating alone.

I made a quick recipe which really didn´t take much of my time, and once I had created my dinner for one dish, I put myself in the right setting to enjoy this meal.

Candles, a fan for this heat, a glass of wine and sadly my laptop with a bit of Desperate housewives on it just to give myself company! But as I sat in my chair eating this lovely bit of rice I just quickly rustled up I really didn´t care what I was watching but i was proud of being able to enjoy a nice cooked meal in my own company.
Of course this could be better in done company, but if there is that someone special missing it´s ok, food comes first!





Here´s my quick, simple recipe just for a little inspiration with little in the fridge and cupboards and all you have is left overs or scraps.



Rice - 3 hand fulls
1 Garlic clove (according to your garlic taste)
1/4 of an onion
1/2 tin of peas
Burger, cordon bleu, pork or anything you want to add with your rice.

Put a small pan to boil and add salt.

In another pan put oil to heat and add chopped garlic and leave to fry until it goes a golden colour.
Add largely chopped onion and fry with the peas, if you like a bit of spice go ahead! Leave it at a medium heat for about 10 minutes.
By this time, the water in the pan should be boiling, add the rice.
Take the peas out of the frying pan and either put the burger in that pan (if you dont have more) or fry it in a clean one but the frying pan that was cooking the peas needs to stay hot.
Once you have cooked your burger the rice should almost be done.
Once the rice is ready and has been drained (after about 15-20mins) put the rice and peas in the frying pan for a few minutes, fry it a bit and its done!!!

Serve on a plate with your burger and your sorted!
